Saint John Restaurant to Host “Carnivore’s Delight” Wine Dinner in New Orleans

New Orleans diners who appreciate bold flavors and thoughtfully paired wines will have a unique opportunity later this month when Saint John hosts its “Carnivore’s Delight” Wine Dinner on Thursday, March 19 at 6 p.m.

The four-course dinner costs $125 per person plus tax and gratuity and highlights richly prepared meat-forward dishes paired with wines selected to elevate each course. Reservations are available through Resy, and guests can also call the restaurant directly at 504-381-0385 to reserve a seat.

Located at 715 Saint Charles Avenue, Saint John has quickly built a reputation for refined Southern cuisine rooted in Louisiana traditions. The restaurant is led by acclaimed chef and restaurateur Eric Cook. Cook blends classic Creole techniques with modern culinary influences. Before opening his own restaurants, he served as executive chef at Commander’s Palace. Over the years he has become known for bold flavors, carefully sourced ingredients, and creative interpretations of regional dishes.

Saint John sits just steps from historic landmarks such as St. Louis Cathedral and Jackson Square. The location makes it a popular stop for both locals and visitors seeking an upscale dining experience that still feels distinctly New Orleans. The restaurant’s menu typically highlights seasonal Gulf seafood, high quality meats, and rich Louisiana flavors. For the Carnivore’s Delight dinner, Chef Cook and his team will lean into indulgent ingredients and layered flavor combinations.

 

The evening begins with Sea & Land, which pairs tuna carpaccio with beef tartare. The dish also includes marinated fennel, dill Dijon-naise, and a batter fried caperberry. It will be served with Cote Mas Crémant de Limoux Brut, a sparkling wine chosen to cut through the richness while highlighting the delicate balance between seafood and beef.

The second course, Marrow & Roe, features roasted bone marrow served canoe style and topped with blue crab ravigote, grilled ciabatta, and micro arugula. This luxurious dish will be paired with Gunderloch Riesling “Fritz.” The wine’s acidity complements the richness of the marrow while allowing the crab to remain the star of the dish.

The third course is Lamb Osso Buco en Bianco. The dish features braised lamb shank served with prosciutto and pistachio gremolata, sweet pea polenta, and natural jus. The pairing for this course is Tablas Creek Patelin Blanc from Paso Robles, a white blend selected to complement the savory depth of the lamb without overpowering it.

Dessert closes the evening with Millionaire Cookies, a sweet and savory treat made with candied bacon, chocolate chips, and pimentón Maldon salt. The dessert will be served with Famiglia Carafoli “Nicchia” Lambrusco, whose fruit forward character and light effervescence provide a balanced finish to the meal.

Wine dinners have become increasingly popular across New Orleans as restaurants create curated experiences that showcase the relationship between food and wine.
